Try Making Pumpkin Pickle This Halloween

Don’t let excess pumpkin go to waste this Halloween.

McKinney’s Pickled Pumpkin is a great way to preserve delicious in-season vegetable and can be made in under 15 minutes. Flavoured with warm spices and sweetened with McKinney’s Granulated Sugar, this pickle is a delicious accompaniment to game, beef or served with a cheeseboard.

Makes approx. 700g.

Ingredients.
500 g pumpkin flesh, cut into small chunks

Marinade:
200ml vinegar
400ml water
Piece of fresh ginger cut into slices measuring roughly 3 x 3 cm
1 cinnamon stick
1 tsp salt
10 cloves
1 star anise
400g McKinney’s Granulated Sugar

Method
1. Combine the marinade ingredients in a small pan and bring to the boil.
2. Add the pumpkin chunks and simmer for 10 minutes.
3. Remove the pumpkin from the marinade and put it in warm, sterilised jars.
4. Pour the marinade over the pumpkin until it is completely covered. Seal and store in a cool place.

**This pickle will keep for up to two weeks in the fridge.
